Ingredients:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro for garnish

Cooking Steps:

Step 1: In a large pan, heat oil over medium heat. Add chopped onions and cook until golden brown.

Step 2: Add minced garlic and grated ginger to the onions. Sauté for a minute until fragrant.

Step 3: Stir in curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for an additional minute to enhance the spices.

Step 4: Add diced tomatoes to the spice mixture. Cook until the tomatoes break down and form a thick sauce.

Step 5: Pour in the drained chickpeas, stirring to coat them with the flavorful sauce.

Step 6: Add coconut milk, salt, and pepper. Bring the curry to a gentle simmer.

Step 7: Let the Chickpea Curry simmer for about 15-20 minutes, allowing the flavors to meld.

Step 8: Adjust seasoning according to your taste preferences.

Step 9: Garnish with fresh cilantro before serving.

Serve this Chickpea Curry over rice or with naan for a wholesome and satisfying meal that's rich in protein and bursting with flavor.
