Perfect Passionfruit Cake
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup passionfruit pulp (about 8-10 passionfruits)
- 1/2 cup plain yogurt
- Zest of one lemon
For the Glaze (optional):
- 1 cup powdered sugar
- 2-3 tablespoons passionfruit juice
Steps:
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
Step 2: In a bowl, whisk together flour, baking powder, baking soda, and salt.
Step 3: In a separate large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 4: Add passionfruit pulp, plain yogurt, and lemon zest to the wet ingredients. Mix until well combined.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 8: Optional Glaze - In a small bowl, whisk together powdered sugar and passionfruit juice. Drizzle the glaze over the cooled cake.
