Ingredients:

For the Pie Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons ice water

For the Custard Filling:

  • 2 cups whole milk
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • Ground nutmeg for sprinkling (optional)

Cooking Steps:

For the Pie Crust:

Step 1: In a food processor, combine all-purpose flour, cold butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.

Step 2: Gradually add ice water, one tablespoon at a time, and pulse until the dough starts to come together.

Step 3: Turn the dough out onto a floured surface and knead it gently to form a smooth ball. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4: Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish. Trim any excess and crimp the edges.

For the Custard Filling:

Step 5: In a saucepan, heat whole milk until it just starts to simmer. Remove from heat.

Step 6: In a bowl, whisk together granulated sugar, cornstarch, and salt.

Step 7: In a separate bowl, beat eggs. Gradually whisk the hot milk into the egg mixture, whisking continuously to avoid curdling.

Step 8: Whisk the sugar-cornstarch mixture into the egg-milk mixture until well combined.

Step 9: Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.

Step 10: Remove from heat and stir in vanilla extract.

Assembly and Baking:

Step 11: Pour the custard filling into the prepared pie crust.

Step 12: Optional: Sprinkle ground nutmeg over the top for a classic touch.

Step 13: Bake in the preheated oven for 30-35 minutes or until the custard is set and the crust is golden brown.
