Mutton curry

Ingredients

For Mutton Marination

  • 1200 gram Mutton (with bones)
  • ¼ cup Mustard oil,
  • Salt to taste,
  • 1 heaped tbsp Ginger Garlic paste,
  • 2 medium size Onion paste,
  • ½ tbsp Degi red chili powder,
  • ½ tsp Turmeric powder,
  • 1 ½ tbsp Coriander powder,
  • 4 Green cardamom,
  • 1 Black cardamom,
  • 4-5 Cloves,
  • 2 tbsp Mustard oil,

For Potato Marination

  • 2 medium size Potatoes, peeled, cut into quarter,
  • 1 ½ tsp Mustard oil,
  • Salt to taste,
  • A pinch of turmeric powder,
  • A pinch of degi red chilli powder

For Mutton Masala

  • 2 tbsp Coriander seeds,
  • 1 tbsp Black peppercorns,
  • 4-5 Black cardamom,
  • 5-6 Cloves,
  • ½ tsp Cumin seeds,
  • 10-12 no. Dry fenugreek seeds,
  • ½ tbsp Salt,
  • 1 tbsp Stone flower,
  • 1 inch Cinnamon stick,
  • 2 Bay leaf, roughly torn

For Ginger Garlic Paste

  • 8-10 Garlic cloves,
  • 2 inch Ginger, peeled, slice,
  • 2 Green chillies, broken into half

For Tempering

  • 1 ½ tbsp Mustard oil,
  • ¼ cup Oil,
  • 1 inch Cinnamon stick,
  • 1 Bay leaf,
  • 1 Dry red chilli,
  • Prepared Ginger Garlic Paste,
  • 6 small Onions, roughly slice,
  • Marinated Mutton,
  • 1 ¼ cup Curd, beaten,
  • 2 tbsp fresh Mint leaves, roughly torn,
  • 2-3 cups Water,
  • Marinated Potatoes,
  • 1 tbsp Prepared Masala,
  • 2 tbsp Coriander leaves, chopped,
  • 1 inch Ginger, julienned,
  • 1 tsp Lemon juice

For Garnish

  • Coriander sprig,
  • Ginger, julienned

Process

For Mutton Marination

  1. In a bowl, add mutton with bones, mustard oil, salt to taste, ginger garlic paste, onion paste, degi red chili powder, turmeric powder, coriander powder, green cardamom, black cardamom, cloves, mustard oil and mix everything well.
  2. Let it marinate for 10-15 minutes.

For Potato Marination

  1. In a bowl, add potatoes, mustard oil, salt to taste, turmeric powder and degi red chili powder.
  2. Mix it well and keep aside for further use.

For Mutton Masala

  1. In a pan, add coriander seeds, black peppercorns, black cardamom, cloves, cumin seeds, dry fenugreek seeds, salt, stone flower, cinnamon stick and bayleaf.
  2. Roast the whole spices for 20-30 seconds or until fregrant.
  3. Transfer it into a grinder jar and grind into a fine powder and keep it aside for further use.

For Ginger Garlic Paste

  1. In a mortar pestle, add garlic, green chillies and ginger.
  2. Crush it into a coarse paste and keep aside for further use.

For Tempering

  1. In a sauce pot, add mustard oil, refined oil, cinnamon stick, bayleaf, dry red chili and prepared ginger garlic paste. Saute it for 5-10 seconds.
  2. Now, add onions and saute them for 2-3 minutes or until onion turns golden brown.
  3. Add marinated mutton and keep sauteing for 5-10 minutes. Add curd and mix well.
  4. Add mint leaves and cover it with a lid. Let it cook for 2-3 minutes on low flame.
  5. Add water and cover it with the lid and cook it for 20-25 minutes.
  6. Now, add marinated potatoes and mix it well.
  7. Transfer the mutton into a pressure cooker and cook for 2-3 whistles.
  8. Now, add mutton masala, coriander leaves, ginger and lemon juice.
  9. Once the mutton is cooked well, transfer it into a serving bowl and garnish it with coriander sprig and ginger juillined.
  10. Serve hot with roti or rice.
