Strawberry & Rhubarb Cordial

INGREDIENTS
- 250g Strawberries
- 250g Rhubarb
- 250g White Sugar
- 30ml Lemon Juice
- 1 cup of water
METHOD
1. Combine the strawberries, rhubarb and sugar in a glass bowl. Ensure that the sugar is coating all the fruit
2. Let it sit for 2+ hours (or overnight in the fridge)
3. Transfer the contents of the bowl to a saucepan and place on high heat
4. Add the juice of one lemon and 1 cup of water to the saucepan
5. Turn the heat off once it starts to foam
6. Let cool and strain into a sterilised glass bottle
