Ingredients

  • 2 2/3 cups all-purpose flour (335g)
  • 1 ½ cups dark brown sugar, firmly packed (300g)
  • ½ cup granulated sugar (100g)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 ½ teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¾ teaspoon allspice
  • ¾ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 12 Tablespoons unsalted butter, melted (177g)
  • ½ cup canola or vegetable oil (118ml)
  • 3 large eggs, room temperature preferred
  • 1 Tablespoon vanilla extract
  • 1 cup sour cream (8 oz/240g)
  • ¼ cup whole milk (60ml)

Cream Cheese Icing

  • 8 oz cream cheese, softened (225g) (use brick-style, not the kind sold in tubs)
  • ½ cup unsalted butter, softened (113g)
  • 3 ½ cups powdered sugar (440g)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
