A recipe for Mushroom Masala:

Ingredients:

  • 2 cups mushrooms, sliced
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 cup fresh cream
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onions to the pan and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add the tomato puree to the pan and cook for 2-3 minutes until the oil separates from the mixture.
  5. Add the sliced mushrooms to the pan and mix well. Cook for 5-6 minutes, stirring occasionally.
  6. In a small bowl, mix together the red chili powder, turmeric powder, coriander powder, and garam masala with a little water to form a paste. Add this paste to the pan and mix well.
  7. Reduce the heat to low, cover the pan, and let the mushrooms cook for about 10 minutes or until they are tender.
  8. Add fresh cream to the pan and mix well. Cook for an additional 2-3 minutes.
  9. Season with salt according to taste and mix well.
  10. Garnish with chopped coriander leaves.
