Beef Shogayaki

Ingredients:
- 1 pound thinly sliced beef (such as sirloin or ribeye)
- 2 tablespoons soy sauce
- 2 tablespoons mirin (sweet rice wine)
- 1 tablespoon sake (Japanese rice wine) or dry white wine
- 2 tablespoons grated ginger
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil (optional)
- 1 tablespoon brown sugar or honey (optional)
- Thinly sliced green onions (scallions) for garnish
Instructions:
- In a bowl, mix together the soy sauce, mirin, sake, grated ginger, and optional brown sugar or honey. This will be the marinade and sauce for the Beef Shogayaki.
- Add the thinly sliced beef to the marinade and toss to coat the beef evenly. Let it marinate for about 15-30 minutes to allow the flavors to infuse.
- Heat a large skillet or wok over medium-high heat. Add the vegetable oil and sesame oil (if using) to the pan.
- Once the oil is hot, add the marinated beef to the pan, reserving the marinade for later. Stir-fry the beef for a few minutes until it is cooked through and slightly browned.
- Pour the reserved marinade into the pan with the beef and continue to stir-fry for another minute or until the sauce thickens slightly and coats the beef.
- Remove the pan from the heat and transfer the Beef Shogayaki to a serving plate.
- Garnish with thinly sliced green onions (scallions) for added freshness and flavor.
- Serve the Beef Shogayaki hot with steamed rice and your choice of side vegetables, such as stir-fried bok choy or steamed broccoli.
