Green Chutney

Ingredients:

  • COCONUT | рдирд╛рд░рд┐рдпрд▓ 1 NO. (SCRAPED)
  • FRESH CORIANDER | рд╣рд░рд╛ рдзрдирд┐рдпрд╛ A FEW LEAVES
  • GREEN CHILLI | рд╣рд░реА рдорд┐рд░реНрдЪ 2-3 NOS.
  • GINGER | рдЕрджрд░рдХ 1 INCH
  • LEMON JUICE | рдиреАрдВрдмреВ рдХрд╛ рд░рд╕ OF ┬╜ A LEMON
  • SUGAR | рд╢рдХреНрдХрд░ 2 TSP
  • SALT | рдирдордХ TO TASTE
  • WATER | рдкрд╛рдиреА AS REQUIRED

Method:

  1. In a mixer grinder jar add the coconut along with all the remaining ingredients, make sure you donтАЩt add a lot of water.
  2. Grind everything into a coarse chutney.
  3. Your quick & delicious chutney is ready.

Vadi

Ingredients:

  • FRESH CORIANDER | рд╣рд░рд╛ рдзрдирд┐рдпрд╛ 100 GRAMS
  • GARLIC | рд▓реЗрд╣рд╕реБрди 10 CLOVES
  • GREEN CHILLI | рд╣рд░реА рдорд┐рд░реНрдЪ 3 NOS.
  • CUMIN SEEDS | рдЬреАрд░рд╛ 1 TSP
  • SALT | рдирдордХ A PINCH
  • GRAM FLOUR | рдмреЗрд╕рди 120 GRAMS
  • RICE FLOUR | рдЪрд╛рд╡рд▓ рдХрд╛ рдЖрдЯрд╛ ┬╝ CUP
  • WHITE SESAME SEEDS | рд╕рдлреЗрдж рддрд┐рд▓ 2 TBSP
  • SALT | рдирдордХ TO TASTE
  • TURMERIC POWDER | рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░ ┬╝ TSP
  • SPICY RED CHILLI POWDER | рддреАрдЦреА рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░ ┬╝ TSP
  • OIL | рддреЗрд▓ 2 TSP
  • WATER | рдкрд╛рдиреА 60 ML (ADDED GRADUALLY)
  • OIL | рддреЗрд▓
  • SESAME SEEDS | рд╕рдлреЗрдж рддрд┐рд▓ AS REQUIRED

Method:

  1. To make the vadis youтАЩll first need to sort, wash & clean the coriander, make sure you oat dry the coriander after washing, it needs to be dry.
  2. Further chop the coriander roughly & add it into a large bowl.
  3. Then make a coarse paste by grinding green chillies, garlic & salt.
  4. Add the paste to the fresh coriander & mix it well.
  5. Further add gram flour, rice flour, white sesame seeds, salt, turmeric powder, spicy red chilli powder & oil, mix it briefly to mix all the ingredients.
  6. Gradually add the water & combine everything to make a dough, it should not be to stuff not too soft.
  7. Grease a tray or plate with oil & drizzle some white sesame seeds on it.
  8. Place the dough & shape it to form 1 inch thick slab then drizzle some more white sesame seeds on the top.
  9. Steam the mixture for 12-15 minutes over medium high flame.
  10. Once steamed, take the tray out of the steamer & let it cool down.
  11. Then remove the vadi slab from the tray using a spatula & cut it into squares or rectangle as per your size preference
  12. Further fry them in moderately hot oil until golden brown, you can also shallow fry them, remove them into a sieve once fried.
  13. Your Kothimbir vadis are ready.
