Healthy Broccoli Soup No cornflour No cream

This nutritious broccoli soup is packed with flavor and provides a comforting, wholesome option without the need for heavy creams or cornflour

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 medium potato, peeled and diced
  • 4 cups broccoli florets
  • 4 cups vegetable broth (low sodium)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup unsweetened almond milk or low-fat milk
  • Squeeze of fresh lemon juice (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add Potato and Broccoli:
    • Add diced potato and broccoli florets to the pot. Stir and cook for a few minutes.
  3. Pour in Broth:
    • Pour in the vegetable broth, and add dried thyme, salt, and pepper to taste. Bring the mixture to a boil.
  4. Simmer Until Vegetables are Tender:
    • Reduce heat to simmer, cover the pot, and let it cook until the vegetables are tender, about 15-20 minutes.
  5. Blend:
    • Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.
  6. Add Almond Milk:
    • Stir in unsweetened almond milk (or low-fat milk) to achieve the desired consistency. Adjust salt and pepper.
  7. Optional Lemon Juice:
    • If desired, add a squeeze of fresh lemon juice for a touch of brightness. Stir to combine.
  8. Serve:
    • Ladle the soup into bowls, and garnish with chopped fresh parsley if you like.
  9. Enjoy:
    • Serve your healthy broccoli soup hot and enjoy the creamy goodness without using cream or cornflour.
