Baked Sweet Potato Cheesecake

Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup melted butter
    • 2 tablespoons brown sugar
  • For the Filling:
    • 2 cups cooked and mashed sweet potatoes
    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 1/2 cup brown sugar
    • 4 large eggs
    • 1/4 cup all-purpose flour
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • Pinch of salt

Cooking Steps:

Step 1: Prepare Crust Mix graham cracker crumbs, melted butter, and brown sugar. Press the mixture into the base of a springform pan to create the crust. Chill in the refrigerator while preparing the filling.

Step 2: Cook Sweet Potatoes Boil or bake sweet potatoes until tender. Mash and set aside to cool.

Step 3: Preheat Oven Preheat your oven to 325°F (163°C).

Step 4: Make Filling In a large bowl, beat cream cheese until smooth. Add mashed sweet potatoes, granulated sugar, brown sugar, eggs, flour, vanilla extract, cinnamon, nutmeg, and salt. Beat until well combined.

Step 5: Assemble and Bake Pour the sweet potato cheesecake filling onto the chilled crust. Smooth the top with a spatula. Bake in the preheated oven for 60-70 minutes or until the center is set.

Step 6: Cool and Chill Allow the cheesecake to cool in the oven with the door ajar. Once at room temperature, refrigerate for at least 4 hours or overnight.
