Ingredients:

For the Cake:

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 tablespoon ground ginger
  6. 1 teaspoon ground cinnamon
  7. 1/2 teaspoon ground nutmeg
  8. 1/4 teaspoon ground cloves
  9. 1/2 cup unsalted butter, softened
  10. 1/2 cup brown sugar
  11. 1/2 cup molasses
  12. 2 large eggs
  13. 1 cup strong brewed coffee, cooled

For the Latte Glaze:

  1. 1 cup powdered sugar
  2. 2 tablespoons brewed espresso or strong coffee
  3. 1/2 teaspoon vanilla extract
  4. Pinch of cinnamon (optional)

Cooking Steps:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a sheet cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Add molasses and eggs, beating well after each addition.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee.
  6. Pour the batter into the prepared sheet cake pan and smooth the top.
