Oreo Chocolate Fondant Cake

Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda
- Pinch of salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup crushed OREO cookies (about 10-12 cookies)
For the Fondant:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Steps:
- Preheat the oven to 350°F (175°C) and grease and flour two round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract. Mix until well combined.
- Gradually add boiling water, stirring continuously. The batter will be thin, but that's okay.
- Fold in the crushed OREO cookies.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the fondant by melting chocolate chips and heavy cream together. Stir until smooth.
- Once the cakes are cool, spread the chocolate fondant evenly over the top and sides.
- Optionally, garnish with additional crushed OREO cookies.
