Shrimp Scampi
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 8 oz linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup fresh parsley, chopped
- 1/4 cup dry white wine
- 1 tablespoon lemon juice
- Salt and black pepper to taste

Preparation:
Step 1: Cook Pasta
- Cook the linguine or spaghetti according to the package instructions until al dente. Reserve a cup of pasta cooking water before draining.
Step 2: Sauté Shrimp
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the shrimp and cook until they turn pink, about 2-3 minutes per side. Remove shrimp from the pan and set aside.
Step 3: Make Garlic Butter Sauce
- In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil. Add minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic becomes fragrant.
Step 4: Deglaze with White Wine
- Pour in the white wine to deglaze the pan, scraping up any flavorful bits from the bottom. Let it simmer for 2-3 minutes.
Step 5: Add Lemon Juice and Parsley
- Add lemon juice and chopped fresh parsley to the sauce. Stir to combine.
Step 6: Combine Shrimp and Pasta
- Return the cooked shrimp to the skillet. Toss to coat the shrimp in the garlic butter sauce.
Step 7: Add Pasta Water
- Add a splash of the reserved pasta cooking water to the sauce, adjusting the consistency to your liking.
Step 8: Season and Serve
- Season the dish with salt and black pepper to taste. Toss the cooked pasta into the skillet, ensuring it is well coated with the flavorful sauce.
Step 9: Garnish and Serve
- Serve Shrimp Scampi hot, garnished with additional fresh parsley and grated Parmesan cheese.
