New Orleans Style Shrimp Noodle Soup
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 8 oz linguine or your choice of noodles
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken or seafood broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Cooking Steps:
- In a large pot, heat olive oil over medium heat. Add chopped onions, bell pepper, and celery. Sauté until vegetables are softened.
- Add minced garlic to the pot and cook for an additional minute until fragrant.
- Stir in Cajun seasoning, dried thyme, paprika, and cayenne pepper. Cook for another 2 minutes to allow the spices to release their flavors.
- Pour in diced tomatoes (with their juices) and chicken or seafood broth. Bring the mixture to a simmer.
- Add peeled and deveined shrimp to the pot. Cook for 3-5 minutes or until the shrimp turn pink and opaque.
- While the soup is simmering, cook the noodles according to the package instructions. Drain and set aside.
- Season the soup with salt and black pepper to taste.
- Serve the New Orleans Style Shrimp Noodle Soup by placing a portion of cooked noodles in each bowl and ladling the flavorful shrimp and vegetable soup over them.
- Garnish with fresh parsley and serve hot.
