New Orleans Style Shrimp Noodle Soup

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 8 oz linguine or your choice of noodles
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken or seafood broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Cooking Steps:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, bell pepper, and celery. Sauté until vegetables are softened.
  2. Add minced garlic to the pot and cook for an additional minute until fragrant.
  3. Stir in Cajun seasoning, dried thyme, paprika, and cayenne pepper. Cook for another 2 minutes to allow the spices to release their flavors.
  4. Pour in diced tomatoes (with their juices) and chicken or seafood broth. Bring the mixture to a simmer.
  5. Add peeled and deveined shrimp to the pot. Cook for 3-5 minutes or until the shrimp turn pink and opaque.
  6. While the soup is simmering, cook the noodles according to the package instructions. Drain and set aside.
  7. Season the soup with salt and black pepper to taste.
