Mixed Veg Soup
Ingredients:
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 cup peas
- 1 cup corn kernels
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil
- 8 cups vegetable broth or water
- Fresh coriander leaves, chopped (for garnish)
Preparation:
Step 1: Sauté Aromatics In a large pot, heat olive oil over medium heat. Add cumin seeds, minced garlic, and grated ginger. Sauté until fragrant.
Step 2: Vegetable Medley Add chopped onions and cook until they become translucent. Stir in diced carrots, potatoes, green beans, peas, and corn kernels.
