Oxtails Smothered in Gravy Over Rice

Ingredients:

  1. 2 lbs oxtails
  2. 1 cup all-purpose flour
  3. 1 large onion, diced
  4. 2 carrots, diced
  5. 3 cloves garlic, minced
  6. 2 cups beef broth
  7. 1 cup red wine (optional)
  8. 2 tbsp tomato paste
  9. 2 sprigs fresh thyme
  10. Salt and pepper to taste
  11. Cooking oil for browning

Cooking Steps:

  1. Dredge oxtails in flour, shaking off excess.
  2. In a large pot, heat oil over medium-high heat. Brown oxtails on all sides.
  3. Remove oxtails and sauté onions, carrots, and garlic until softened.
  4. Add tomato paste and cook for a couple of minutes.
  5. Pour in red wine (if using) to deglaze the pot.
  6. Return oxtails to the pot, add beef broth, thyme, salt, and pepper. Bring to a simmer.
  7. Cover and simmer on low heat for 2-3 hours until oxtails are tender.
  8. Adjust seasoning and serve the oxtails and gravy over a bed of rice.
