Ingredients:

  • 1 lb ground beef or Italian sausage
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped (for garnish)

Preparation:

Step 1: Brown Meat and Aromatics In a large pot, brown ground beef or Italian sausage over medium heat. Add chopped onions and minced garlic, cooking until the onions are softened.

Step 2: Add Tomatoes and Broth Pour in crushed tomatoes, diced tomatoes, and beef or vegetable broth. Stir in dried basil, oregano, thyme, salt, and pepper. Bring the soup to a simmer.
