The best ever Broccoli Cheddar Soup

Ingredients:

  • 4 cups broccoli florets
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 3 cups chicken or vegetable broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: Croutons or additional shredded cheese for garnish

Cooking Steps:

  1. In a large pot, melt butter over medium heat. Add chopped onions and garlic, sautéing until onions are translucent.
  2. Sprinkle flour over the onion mixture and stir well to create a roux. Cook for 2-3 minutes to remove the raw taste of the flour.
  3. Gradually add chicken or vegetable broth to the pot, stirring constantly to avoid lumps.
  4. Add diced carrots and broccoli florets to the pot. Simmer until vegetables are tender, about 15 minutes.
  5. Using an immersion blender, puree the soup until smooth, or blend in batches in a regular blender.
  6. Return the soup to the heat and add milk, heavy cream, and shredded cheddar cheese. Stir until the cheese is melted and the soup is smooth and creamy.
  7. Season with salt and pepper to taste. Adjust the consistency with additional broth or milk if needed.
