The best ever Broccoli Cheddar Soup
Ingredients:
- 4 cups broccoli florets
- 1 onion, finely chopped
- 2 carrots, peeled and diced
- 3 cups chicken or vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup all-purpose flour
- 3 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: Croutons or additional shredded cheese for garnish
Cooking Steps:
- In a large pot, melt butter over medium heat. Add chopped onions and garlic, sautéing until onions are translucent.
- Sprinkle flour over the onion mixture and stir well to create a roux. Cook for 2-3 minutes to remove the raw taste of the flour.
- Gradually add chicken or vegetable broth to the pot, stirring constantly to avoid lumps.
- Add diced carrots and broccoli florets to the pot. Simmer until vegetables are tender, about 15 minutes.
- Using an immersion blender, puree the soup until smooth, or blend in batches in a regular blender.
- Return the soup to the heat and add milk, heavy cream, and shredded cheddar cheese. Stir until the cheese is melted and the soup is smooth and creamy.
- Season with salt and pepper to taste. Adjust the consistency with additional broth or milk if needed.
