Shegaon chi Kachori
Ingredients:
For the Kachori Dough:
- 2 cups all-purpose flour
- 1/4 cup semolina (sooji)
- 1/4 cup ghee (clarified butter)
- Salt to taste
- Water for kneading
For the Kachori Filling:
- 1 cup yellow moong dal (split yellow lentils), soaked for a few hours
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1/2 teaspoon asafoetida (hing)
- 1 teaspoon cumin seeds
- 1 teaspoon ginger, grated
- 1 teaspoon green chili, finely chopped (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves, chopped, for garnish
For Deep Frying:
- Cooking oil
Steps:
Prepare the Kachori Dough:
- In a bowl, combine all-purpose flour, semolina, ghee, and salt.
- Gradually add water and knead the mixture into a smooth and firm dough.
- Cover the dough and let it rest for about 15-20 minutes.
Prepare the Kachori Filling:
- Rinse the soaked moong dal and grind it into a coarse paste without adding water.
- In a pan, heat oil over medium heat. Add mustard seeds and let them splutter.
- Add asafoetida, cumin seeds, grated ginger, and chopped green chili. Sauté for a minute.
- Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the ground moong dal paste and cook the mixture until it thickens. Allow it to cool.
Assemble and Fry the Kachori:
- Divide the rested dough into small balls. Roll each ball into a small disc.
- Place a spoonful of the moong dal filling in the center of the disc. Fold and seal the edges to form a stuffed ball.
- Flatten the stuffed ball slightly and roll it out gently into a kachori shape.
- Heat oil in a pan for deep frying. Fry the kachori on medium heat until they turn golden brown and crisp.
- Remove the fried Shegaon chi Kachori and drain excess oil on a paper towel.
- Garnish with chopped fresh coriander leaves.
- Serve hot and enjoy the delightful flavors of Shegaon chi Kachori.
