Shegaon chi Kachori

Ingredients:

For the Kachori Dough:

  • 2 cups all-purpose flour
  • 1/4 cup semolina (sooji)
  • 1/4 cup ghee (clarified butter)
  • Salt to taste
  • Water for kneading

For the Kachori Filling:

  • 1 cup yellow moong dal (split yellow lentils), soaked for a few hours
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon asafoetida (hing)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 teaspoon green chili, finely chopped (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish

For Deep Frying:

  • Cooking oil

Steps:

Prepare the Kachori Dough:

  1. In a bowl, combine all-purpose flour, semolina, ghee, and salt.
  2. Gradually add water and knead the mixture into a smooth and firm dough.
  3. Cover the dough and let it rest for about 15-20 minutes.

Prepare the Kachori Filling:

  1. Rinse the soaked moong dal and grind it into a coarse paste without adding water.
  2. In a pan, heat oil over medium heat. Add mustard seeds and let them splutter.
  3. Add asafoetida, cumin seeds, grated ginger, and chopped green chili. Sauté for a minute.
  4. Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  5. Add the ground moong dal paste and cook the mixture until it thickens. Allow it to cool.

Assemble and Fry the Kachori:

  1. Divide the rested dough into small balls. Roll each ball into a small disc.
  2. Place a spoonful of the moong dal filling in the center of the disc. Fold and seal the edges to form a stuffed ball.
  3. Flatten the stuffed ball slightly and roll it out gently into a kachori shape.
  4. Heat oil in a pan for deep frying. Fry the kachori on medium heat until they turn golden brown and crisp.
  5. Remove the fried Shegaon chi Kachori and drain excess oil on a paper towel.
  6. Garnish with chopped fresh coriander leaves.
  7. Serve hot and enjoy the delightful flavors of Shegaon chi Kachori.
