Ingredients:
For Laksa Paste:
- 2 stalks lemongrass, chopped
- 4 shallots, peeled
- 4 cloves garlic, peeled
- 1 thumb-sized ginger, peeled
- 2 red chilies, deseeded
- 1 tablespoon coriander powder
- 1 teaspoon turmeric powder
- 1 tablespoon chili paste (adjust to spice preference)
- 2 tablespoons vegetable oil
For Laksa Base:
- 2 tablespoons laksa paste (from above)
- 400 ml coconut milk
- 1 liter chicken stock
- 300g chicken breast, thinly sliced
- 200g rice noodles, cooked according to package instructions
- Bean sprouts, cilantro, and lime wedges for garnish
Steps:
For Laksa Paste:
- Blend lemongrass, shallots, garlic, ginger, red chilies, coriander powder, turmeric powder, and chili paste until a smooth paste forms.
- Heat vegetable oil in a pan and sauté the paste until fragrant.
For Laksa Base:
- In a pot, combine laksa paste, coconut milk, and chicken stock. Bring to a simmer.
- Add sliced chicken and cook until fully cooked.
- Season the laksa base with salt and sugar to taste.
Final Assembly:
- In serving bowls, place cooked rice noodles.
- Ladle the hot laksa broth and chicken over the noodles.
- Garnish with bean sprouts, cilantro, and lime wedges.
