  • 4 cloves garlic, peeled
  • 1 thumb-sized ginger, peeled
  • 2 red chilies, deseeded
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 tablespoon chili paste (adjust to spice preference)
  • 2 tablespoons vegetable oil

For Laksa Base:

  • 2 tablespoons laksa paste (from above)
  • 400 ml coconut milk
  • 1 liter chicken stock
  • 300g chicken breast, thinly sliced
  • 200g rice noodles, cooked according to package instructions
  • Bean sprouts, cilantro, and lime wedges for garnish

Steps:

For Laksa Paste:

  1. Blend lemongrass, shallots, garlic, ginger, red chilies, coriander powder, turmeric powder, and chili paste until a smooth paste forms.
  2. Heat vegetable oil in a pan and sauté the paste until fragrant.

For Laksa Base:

  1. In a pot, combine laksa paste, coconut milk, and chicken stock. Bring to a simmer.
  2. Add sliced chicken and cook until fully cooked.
