Palak Aloo ki sabzi

Ingredients:

  • 2 cups fresh spinach (palak), washed and finely chopped
  • 2 medium-sized potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Steps:

  1. Heat cooking oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw aroma disappears.
  4. Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
  5. Sprinkle turmeric powder, coriander powder, red chili powder, and garam masala over the mixture. Mix well and cook for an additional minute.
  6. Add diced potatoes to the spice mixture and cook for a few minutes until they are slightly browned.
  7. Pour in a small amount of water, cover the pan, and let the potatoes cook until they are almost tender.
  8. Once the potatoes are almost cooked, add the finely chopped spinach to the pan. Mix well and cook until the spinach wilts and the potatoes are fully cooked.
  9. Season the Palak Aloo ki Sabzi with salt to taste. Adjust the seasoning if needed.
  10. Garnish with fresh coriander leaves before serving.
