Palak Aloo ki sabzi

Ingredients:
- 2 cups fresh spinach (palak), washed and finely chopped
- 2 medium-sized potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish
Steps:
- Heat cooking oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw aroma disappears.
- Add chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
- Sprinkle turmeric powder, coriander powder, red chili powder, and garam masala over the mixture. Mix well and cook for an additional minute.
- Add diced potatoes to the spice mixture and cook for a few minutes until they are slightly browned.
- Pour in a small amount of water, cover the pan, and let the potatoes cook until they are almost tender.
- Once the potatoes are almost cooked, add the finely chopped spinach to the pan. Mix well and cook until the spinach wilts and the potatoes are fully cooked.
- Season the Palak Aloo ki Sabzi with salt to taste. Adjust the seasoning if needed.
- Garnish with fresh coriander leaves before serving.
Serve this Palak Aloo ki Sabzi hot with roti or rice for a wholesome and delicious vegetarian meal that showcases the delightful combination of spinach and potatoes.
