Lehsuni Palak Paneer

Ingredients:

  • 2 cups fresh spinach leaves, washed and chopped
  • 200g paneer (Indian cottage cheese), cubed
  • 1 large onion, finely chopped
  • 3 tomatoes, pureed
  • 8-10 garlic cloves, minced
  • 1-inch ginger, grated
  • 1-2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh cream (optional, for garnish)

Cooking Steps:

Step 1: Blanch the chopped spinach leaves in boiling water for 2-3 minutes. Drain and immediately transfer to cold water. Blend to a smooth puree.

Step 2: Heat oil or ghee in a pan. Add cumin seeds and let them splutter.

Step 3: Add finely chopped onions and sauté until golden brown.

Step 4: Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute until the raw aroma disappears.

Step 5: Pour in the tomato puree and cook until the oil separates from the masala.

Step 6: Add turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala. Cook the masala until it's well-cooked and the oil starts to separate.

Step 7: Add the spinach puree and cook for 2-3 minutes, allowing the flavors to blend.

Step 8: Add cubed paneer and salt. Mix well and let it simmer for 5-7 minutes until the paneer absorbs the flavors.

Step 9: Garnish with a swirl of fresh cream if desired.

Step 10: Serve the Lehsuni Palak Paneer hot with naan, roti, or rice.
