Ingredients:

  1. 1/2 cup unsalted butter
  2. 4 oz (about 120g) dark chocolate, chopped
  3. 2 large eggs
  4. 1/2 cup granulated sugar
  5. 1/4 cup all-purpose flour
  6. 2 tablespoons cocoa powder
  7. 1/4 teaspoon salt
  8. 1 teaspoon instant coffee granules (optional)
  9. 1/2 teaspoon vanilla extract

For Serving:

  1. Powdered sugar
  2. Vanilla ice cream (optional)

Steps:

Step 1: Preheat the oven to 425°F (220°C). Grease and flour individual ramekins.

Step 2: In a heatproof bowl, melt the butter and dark chocolate together. Stir until smooth and set aside to cool slightly.

Step 3: In a separate bowl, whisk together eggs and granulated sugar until well combined.

Step 4: Pour the melted chocolate mixture into the egg mixture, stirring continuously.

Step 5: Sift in the flour, cocoa powder, and salt. Add instant coffee granules if using, and stir until just combined. Mix in vanilla extract.

Step 6: Divide the batter evenly among the prepared ramekins.

Step 7: Bake in the preheated oven for 10-12 minutes or until the edges are set, but the centers are still soft.

Step 8: Allow the Hot Chocolate Cakes to cool for a few minutes before serving.

Step 9: Dust with powdered sugar and, if desired, serve with a scoop of vanilla ice cream.
