Blackberry pie is a classic and delicious dessert that showcases the sweet and tart flavors of blackberries. Here's a recipe to help you make a homemade blackberry pie:

Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cut into small cubes
  • 1/4 to 1/2 cup ice water

For the filling:

  • 5 cups fresh blackberries
  • 3/4 cup granulated sugar (adjust according to the sweetness of the berries)
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

For the topping:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, sugar, and salt for the crust. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Gradually add the ice water, starting with 1/4 cup, and mix until the dough comes together. Add more water if needed, a tablespoon at a time, until the dough is moist but not overly wet.
  4. Divide the dough in half and shape each portion into a disk. Wrap them in plastic wrap and refrigerate for at least 30 minutes.
  5. In a separate bowl, combine the blackberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt for the filling. Gently toss until the blackberries are coated evenly. Let the mixture sit for about 10 minutes to allow the berries to release some juice.
  6. On a lightly floured surface, roll out one of the dough disks to fit the bottom of a 9-inch pie dish. Carefully transfer the dough to the dish and press it into the bottom and sides.
  7. Pour the blackberry filling into the prepared pie crust.
  8. Roll out the second dough disk and cut it into strips to create a lattice pattern or leave it whole to cover the filling completely. Place the strips or the whole dough over the filling.
  9. Trim any excess dough and crimp the edges of the pie to seal it.
  10. Brush the top crust with beaten egg and sprinkle it with granulated sugar.
  11. Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Remove the pie from the oven and let it cool on a wire rack before slicing and serving.
