Flour Aloo Nashta

Flour Aloo Nashta is a delicious and popular Indian snack made with a dough consisting of flour and stuffed with a spiced potato filling.

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • Water, as needed

For the potato filling:

  • 3 medium-sized potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped (adjust to your spice preference)
  • 1 teaspoon grated ginger
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves, chopped

For frying:

  • Oil

Instructions:

  1. In a large mixing bowl, combine the all-purpose flour, salt, and oil. Mix well.
  2. Gradually add water to the flour mixture and knead it into a soft and smooth dough. The dough should be firm but pliable. Cover the dough and let it rest for about 15-20 minutes.
  3. In the meantime, prepare the potato filling. In a separate bowl, combine the mashed potatoes, chopped onion, green chilies, grated ginger, cumin seeds, turmeric powder, red chili powder, garam masala powder, salt, and chopped coriander leaves. Mix well to combine all the ingredients.
  4. Divide the dough into small equal-sized portions. Roll each portion into a small circle, around 3-4 inches in diameter.
  5. Place a spoonful of the potato filling in the center of each dough circle.
  6. Fold the dough over the filling, sealing the edges together. Press the edges firmly to ensure they are sealed properly.
  7. Gently roll out the stuffed dough into a small disk, taking care not to let the filling escape.
  8. Heat oil in a deep frying pan or kadai over medium heat. Once the oil is hot, carefully slide in the stuffed dough disks (aloo nashta) and fry them until golden brown and crispy on both sides. Fry only a few at a time, avoiding overcrowding the pan.
  9. Remove the fried aloo nashtas from the oil and place them on a paper towel-lined plate to drain excess oil.
  10. Serve the Flour Aloo Nashta hot as a snack or appetizer. It can be enjoyed on its own or served with chutney or tomato ketchup.

Note: You can customize the spices and seasonings in the potato filling according to your taste preferences. Additionally, feel free to add other vegetables or herbs of your choice to the filling to make it more flavorful.
