Christmas Cake

Ingredients:

  1. 2 cups mixed dried fruits (raisins, currants, sultanas)
  2. 1 cup chopped nuts (almonds, walnuts)
  3. 1 cup candied peel
  4. 1 cup unsalted butter, softened (1624 kcal)
  5. 1 cup brown sugar
  6. 4 large eggs
  7. 2 cups all-purpose flour (910 kcal)
  8. 1 teaspoon baking powder
  9. 1 teaspoon mixed spice (cinnamon, nutmeg, cloves)
  10. 1/2 cup molasses or treacle
  11. 1/4 cup brandy or rum (optional)
  12. Zest and juice of 1 orange
  13. Zest and juice of 1 lemon

Instructions:

Step 1: Prepare Fruits and Nuts

  • In a bowl, combine mixed dried fruits, chopped nuts, and candied peel.
  • Soak them in brandy or rum (if using) along with the zest and juice of orange and lemon. Let it marinate overnight.

Step 2: Preheat Oven

  • Preheat the oven to 325°F (163°C).
  • Grease and line a cake tin with parchment paper.

Step 3: Cream Butter and Sugar

  • In a large bowl, cream together softened butter and brown sugar until light and fluffy.

Step 4: Add Eggs and Molasses

  • Add eggs one at a time, beating well after each addition.
  • Mix in molasses or treacle.

Step 5: Combine Dry Ingredients

  • In a separate bowl, sift together flour, baking powder, and mixed spice.

Step 6: Mix Batter

  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Fold in the marinated fruits and nuts.

Step 7: Bake to Perfection

  • Transfer the batter to the prepared cake tin.
  • Bake for 2 to 2.5 hours or until a skewer inserted into the center comes out clean.

Step 8: Cool and Store

  • Allow the Christmas Cake to cool completely in the tin before transferring to a wire rack.
  • Optionally, feed the cake with additional brandy or rum before storing in an airtight container.
