Delicious Sweet Potato Cake
Ingredients:
- 2 cups cooked and mashed sweet potatoes (cooled)
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Preparation:
Step 1: Prepare Sweet Potatoes Cook sweet potatoes until tender, mash them, and let them cool to room temperature.
Step 2: Preheat Oven Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Step 3: Dry Ingredients In a bowl, whisk together flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger. Set aside.
Step 4: Cream Butter and Sugars In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Step 5: Add Eggs and Vanilla Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 6: Alternately Add Ingredients Add the dry ingredients to the wet ingredients in three parts, alternating with the mashed sweet potatoes and buttermilk. Begin and end with the dry ingredients.
Step 7: Divide Batter Divide the batter evenly between the prepared cake pans.
Step 8: Bake Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely.
Step 9: Prepare Cream Cheese Frosting While the cakes are cooling, prepare the cream cheese frosting. In a bowl, beat together softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
Step 10: Frost and Assemble Once the cakes are cool, frost the top of one layer, place the second layer on top, and frost the entire cake with the cream cheese frosting.
Step 11: Garnish (Optional) Garnish the top of the cake with additional nutmeg or a sprinkle of chopped pecans if desired.
