Pav Bhaji in Pressure Cooker

Ingredients:
For Bhaji:
- 2 cups mixed vegetables (potatoes, cauliflower, peas, carrots), chopped
- 1 large onion, finely chopped
- 1 large bell pepper (capsicum), finely chopped
- 2 tomatoes, chopped
- 1/2 cup green beans, chopped
- 1/4 cup butter
- 1 tablespoon oil
- 1 tablespoon pav bhaji masala
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
For Pav:
- Pav (bread rolls)
- Butter for toasting
Preparation:
Step 1: Cook Vegetables In a pressure cooker, add chopped mixed vegetables, onions, bell pepper, tomatoes, green beans, and a little water. Pressure cook until the vegetables are soft and well-cooked.
Step 2: Mash Vegetables Using a potato masher or the back of a spoon, mash the cooked vegetables to a semi-smooth consistency. Set aside.
Step 3: Prepare Bhaji In the same pressure cooker, heat oil and butter. Add cumin seeds and let them splutter. Add ginger-garlic paste and sauté until the raw aroma disappears.
Step 4: Spice it Up Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well to coat the spices evenly.
Step 5: Combine with Mashed Vegetables Add the mashed vegetable mixture to the spice mix. Stir well to combine and let it simmer for a few minutes, allowing the flavors to meld.
Step 6: Garnish and Set Aside Garnish the Pav Bhaji with chopped fresh coriander leaves. Set aside.
For Pav:
Step 7: Butter Toast Pav Slice the pav horizontally and toast them on a griddle with a generous amount of butter until golden brown.
Step 8: Serve Hot Serve the hot Pav Bhaji with buttered pav on the side. Garnish with additional butter on top if desired.
