Ingredients:

  • 400g (14 oz) spaghetti
  • 150g (5 oz) pancetta or guanciale, diced
  • 3 large eggs
  • 1 cup grated Pecorino Romano cheese (or Parmesan)
  • 2 cloves garlic, minced (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation:

Step 1: Boil Spaghetti Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve about a cup of pasta cooking water before draining.

Step 2: Prepare Sauce In a bowl, whisk together eggs, grated Pecorino Romano cheese, salt, and black pepper. Set aside.

Step 3: Cook Pancetta In a skillet, cook diced pancetta over medium heat until it becomes crispy. If using garlic, add it to the skillet and sauté until fragrant.

Step 4: Combine Ingredients Once the spaghetti is cooked, add it to the skillet with the pancetta. Toss to combine, ensuring the pasta is coated with the rendered fat.

Step 5: Add Egg Mixture Remove the skillet from heat and quickly pour the egg and cheese mixture over the spaghetti. Toss continuously to create a creamy sauce, using reserved pasta cooking water if needed to reach the desired consistency.
