- 2 cups canned chickpeas, drained
- 1 can diced tomatoes
- 1 cup rice
- 1 cup quinoa
- 1 can black beans, rinsed
- 1 cup frozen peas
- 1 cup diced bell peppers
- 1 cup shredded cheese
- Olive oil, salt, and pepper
Cooking Steps:
Step 1: Rinse and drain chickpeas and black beans. Set aside.
Step 2: Cook rice and quinoa according to package instructions.
Step 3: In a pan, sauté bell peppers in olive oil until tender.
Step 4: Add diced tomatoes, chickpeas, black beans, and frozen peas to the pan. Cook until heated through.
Step 5: Mix in cooked rice and quinoa. Season with salt and pepper to taste.
