Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mango puree (from ripe mangoes)
  • 1/2 cup plain yogurt
  • 1 cup diced ripe mango (for texture)

Steps:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the mango puree and plain yogurt until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Gently fold in the diced mango to distribute throughout the batter.
  8. Spoon the batter into the muffin cups, filling each about two-thirds full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the Mango Muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
