Easy and Quick Zuppa Toscana

Ingredients:

  1. 1 pound Italian sausage (spicy or mild), crumbled
  2. 1 large onion, chopped
  3. 3 cloves garlic, minced
  4. 4 cups chicken broth
  5. 3 cups water
  6. 4 medium-sized russet potatoes, sliced
  7. 1 cup heavy cream
  8. 2 cups kale, stems removed and leaves chopped
  9. Salt and pepper to taste
  10. Red pepper flakes (optional, for extra heat)
  11. Grated Parmesan cheese for serving

Instructions:

Step 1: In a large pot or Dutch oven, brown the crumbled Italian sausage over medium-high heat. Break it into small pieces as it cooks.

Step 2: Once the sausage is browned, add chopped onions to the pot and sauté until they become translucent.

Step 3: Add minced garlic to the pot and sauté for about 30 seconds until fragrant.

Step 4: Pour in the chicken broth and water. Stir to combine.

Step 5: Add the sliced potatoes to the pot. Bring the soup to a simmer and cook until the potatoes are tender, about 15-20 minutes.

Step 6: Reduce the heat to low, and pour in the heavy cream. Stir to combine.

Step 7: Add the chopped kale to the pot and simmer until it's wilted and tender, about 5-7 minutes.

Step 8: Season the soup with salt, pepper, and red pepper flakes (if using). Adjust the seasoning according to your taste.

Step 9: Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld.

Step 10: Serve the Zuppa Toscana hot, garnished with grated Parmesan cheese.
