30 Minute Taco Soup
Ingredients:
- 1 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1 packet taco seasoning
- 4 cups beef or vegetable broth
- Salt and black pepper to taste
- Toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, lime wedges
Cooking Steps:
Step 1: In a large pot or Dutch oven, brown the ground beef or turkey over medium-high heat, breaking it apart as it cooks.
Step 2: Add diced onions to the pot and cook until they become translucent.
Step 3: Stir in minced garlic and cook for an additional minute until fragrant.
Step 4: Add the taco seasoning to the meat mixture, stirring to coat evenly.
Step 5: Pour in the drained black beans, kidney beans, corn, diced tomatoes, and diced tomatoes with green chilies.
Step 6: Pour in the beef or vegetable broth and bring the soup to a gentle boil.
