Ingredients:

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (14 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1 packet taco seasoning
  • 4 cups beef or vegetable broth
  • Salt and black pepper to taste
  • Toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, lime wedges

Cooking Steps:

Step 1: In a large pot or Dutch oven, brown the ground beef or turkey over medium-high heat, breaking it apart as it cooks.

Step 2: Add diced onions to the pot and cook until they become translucent.

Step 3: Stir in minced garlic and cook for an additional minute until fragrant.

Step 4: Add the taco seasoning to the meat mixture, stirring to coat evenly.
