Chicken Malai Seekh Biryani

Ingredients:

  • 2 cups basmati rice
  • 500g chicken, boneless, cut into pieces (800 kcal)
  • 1 cup malai (cream)
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 cup fried onions
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 4 green chilies, finely chopped
  • 1/2 cup cooking oil
  • Whole spices (bay leaves, cardamom, cloves, cinnamon)
  • Biryani masala, salt, and pepper to taste

Cooking Steps:

Step 1: Marinate the Chicken In a bowl, mix chicken pieces with malai, yogurt, ginger-garlic paste, chopped mint leaves, chopped coriander leaves, green chilies, biryani masala, and salt. Allow it to marinate for at least 1 hour.

Step 2: Cook the Rice Cook basmati rice with whole spices until it's 70% cooked. Drain and set aside.

Step 3: Prepare Malai Seekh Thread marinated chicken onto seekh (skewers) and cook until they are grilled and golden brown.

Step 5: Dum Cooking Cover the pot with a tight-fitting lid and cook on low heat, allowing the biryani to steam and flavors to meld for 20-25 minutes.

Step 6: Garnish and Serve Garnish the Chicken Malai Seekh Biryani with fresh mint leaves and coriander. Serve hot, savoring the fusion of creamy malai and aromatic spices.
