Delicious Pineapple Chicken

Ingredients:

  1. 1.5 lbs (about 680g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  2. 1 cup pineapple chunks (fresh or canned)
  3. 1 red bell pepper, diced
  4. 1 yellow bell pepper, diced
  5. 1 onion, thinly sliced
  6. 3 cloves garlic, minced
  7. 1/2 cup soy sauce
  8. 1/4 cup pineapple juice
  9. 3 tablespoons brown sugar
  10. 2 tablespoons rice vinegar
  11. 1 tablespoon ginger, grated
  12. 1 tablespoon cornstarch (optional, for thickening)
  13. 2 tablespoons vegetable oil
  14. Sesame seeds and chopped green onions for garnish
  15. Cooked rice for serving

Instructions:

Step 1: In a bowl, whisk together soy sauce, pineapple juice, brown sugar, rice vinegar, and grated ginger to create the marinade.

Step 2: Place the chicken pieces in the marinade, ensuring they are well coated. Allow it to marinate for at least 30 minutes.

Step 3: Heat vegetable oil in a large pan or wok over medium-high heat.

Step 4: Add the marinated chicken to the pan and cook until browned and cooked through.

Step 5: Remove the cooked chicken from the pan and set it aside.

Step 6: In the same pan, add a bit more oil if needed. Sauté the sliced onion, minced garlic, and diced bell peppers until they are tender-crisp.

Step 7: Add the pineapple chunks to the pan and stir to combine with the vegetables.

Step 8: Return the cooked chicken to the pan and mix well with the vegetables.

Step 9: In a small bowl, mix cornstarch with a bit of water to create a slurry. Add this to the pan if you prefer a thicker sauce.

Step 10: Let the mixture simmer for a few minutes until the sauce thickens.

Step 11: Garnish with sesame seeds and chopped green onions.

Step 12: Serve the Delicious Pineapple Chicken over a bed of cooked rice and enjoy the delightful combination of flavors!
