Ingredients:

  • 1 whole chicken (3-4 pounds), spatchcocked or flattened
  • Salt and black pepper to taste
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/4 cup olive oil
  • Fresh herbs for garnish (parsley or cilantro)

Steps:

Step 1: Preheat your oven to 375°F (190°C).

Step 2: Season the flattened chicken generously with salt, black pepper, ground coriander, paprika, and garlic powder. Ensure both sides are well-coated.

Step 3: Heat olive oil in an oven-safe skillet over medium-high heat.
