Apple Pie Turned into Cookies
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 medium-sized apples, peeled, cored, and finely diced
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar
- Powdered sugar for dusting (optional)
Steps:
Step 1: In a bowl, whisk together flour, baking powder, and salt. Set aside.
Step 2: In another bowl, cream together softened butter and granulated sugar until light and fluffy.
Step 3: Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
Step 5: In a separate bowl, combine diced apples, cinnamon, nutmeg, and brown sugar.
Step 6: Fold the spiced apple mixture into the cookie dough until evenly distributed.
Step 7: Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.
Step 8: Bake at 350°F (175°C) for 12-15 minutes or until the edges are golden brown.
Step 9: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Step 10: Optionally, dust with powdered sugar for a finishing touch.
