Ingredients:
- 3 large potatoes, peeled and diced
- 2 leeks, cleaned and sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk (dairy or plant-based)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Steps:
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and sliced leeks to the pot. Sauté for a few more minutes until the leeks are softened.
- Add diced potatoes to the pot and season with salt and pepper. Stir to combine.
- Pour in vegetable broth, ensuring that the potatoes are covered. Bring the mixture to a boil.
- Reduce heat to a simmer and cook until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, transfer portions of the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the milk to achieve the desired consistency. Adjust salt and pepper to taste.
- Let the soup simmer for a few more minutes to meld the flavors.

- Garnish with fresh chopped chives for added flavor and freshness.
