Rainbow Fondant Cake
Ingredients:
- 2 1/2 cups all-purpose flour (300g)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened (226g)
- 2 cups granulated sugar (400g)
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups whole milk (300ml)
Fondant:
- Colored fondant in rainbow shades (red, orange, yellow, green, blue, violet)
Buttercream Frosting:
- 2 cups unsalted butter, softened (452g)
- 4 cups powdered sugar (480g)
- 1 teaspoon vanilla extract
- Food coloring (for tinting the buttercream to match the fondant colors)
Steps:
Cake:
Step 1: Preheat the oven to 350°F (180°C). Grease and flour three 8-inch round cake pans.
Step 2: In a bowl, sift together flour, baking powder, and salt.
Step 3: In a separate large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the dry ingredients. Mix until just combined.
Step 5: Divide the batter evenly among the prepared pans. Smooth the tops and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Step 6: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Buttercream Frosting:
Step 7: In a large bowl, beat butter until creamy. Add powdered sugar and vanilla extract. Beat until smooth and fluffy.
Step 8: Divide the buttercream into six portions and tint each portion with food coloring to match the colors of the rainbow.
Assembling:
Step 9: Level the cake layers if necessary. Place the first layer on a serving plate and spread a thin layer of the corresponding colored buttercream.
Step 10: Repeat with the remaining layers, using the matching colored buttercream for each.
Step 11: Crumb coat the entire cake with a thin layer of plain buttercream and chill for 15-20 minutes.
Step 12: Roll out the colored fondant and cover the cake, smoothing it gently with your hands to eliminate air bubbles.
Step 13: Trim excess fondant and decorate the cake as desired.
