Delicious Miniature Watermelon Cake Decorating

Ingredients:
For the Watermelon Layer:
- 1 box of white cake mix (plus ingredients required on the box)
- Red food coloring
- Green food coloring
For the Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Red and green food coloring
For Garnish:
- Mini chocolate chips (for "watermelon seeds")
- Additional green frosting for decoration
Instructions:
- Preheat your oven according to the cake mix instructions. Grease and flour mini cake pans.
- Prepare the white cake mix as directed on the box.
- Divide the cake batter into two portions. Add red food coloring to one portion to create the pink/red watermelon layer. Leave the other portion uncolored for the green rind layer.
- Pour the red batter into the bottom of each mini cake pan, filling them about halfway.
- Bake according to the cake mix instructions or until a toothpick inserted into the center comes out clean.
- Let the cakes cool completely in the pans.
- While the cakes are cooling, prepare the frosting by beating together softened butter, powdered sugar, milk, and vanilla extract until smooth and creamy.
- Divide the frosting into two portions. Color one portion green for the rind and leave the other portion white.
- Once the cakes are cooled, remove them from the pans.
- Trim the tops of the cakes to create an even surface.
- Frost the top of the pink/red layer with white frosting, leaving a small border around the edge.
- Frost the sides of the pink/red layer with green frosting.
- Garnish the "watermelon" with mini chocolate chips as seeds.
- Optional: Use additional green frosting to create decorative patterns on the green rind.
- Repeat the process for each miniature watermelon cake.
