Kitkat Layer Buttercream Cake

Ingredients:
- 2 cups all-purpose flour (240g)
- 1 cup unsweetened cocoa powder (100g)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened (226g)
- 2 cups granulated sugar (400g)
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups buttermilk (360ml)
- KITKAT bars for decoration
Buttercream Frosting:
- 2 cups unsalted butter, softened (452g)
- 4 cups powdered sugar (480g)
- 1/2 cup unsweetened cocoa powder (50g)
- 1 teaspoon vanilla extract
- 4-6 tablespoons heavy cream
Steps:
Cake:
Step 1: Preheat the oven to 350°F (180°C). Grease and flour three 8-inch round cake pans.
Step 2: In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
Step 3: In a separate large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Step 4: Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
Step 5: Divide the batter evenly among the prepared pans. Smooth the tops and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Step 6: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Buttercream Frosting:
Step 7: In a large bowl, beat butter until creamy. Add powdered sugar, cocoa powder, vanilla extract, and heavy cream. Beat until smooth and fluffy.
Assembling:
Step 8: Place one cake layer on a serving plate. Spread a layer of buttercream on top. Repeat with the remaining layers.
Step 9: Frost the sides and top of the cake with the remaining buttercream.
Step 10: Break KITKAT bars in half and arrange them around the sides of the cake, pressing them gently into the frosting.
Step 11: Optional: Tie a ribbon around the cake for an extra decorative touch.
