Egg & Chicken Soup

Ingredients:

  • 1 cup cooked chicken, shredded
  • 6 cups chicken broth
  • 2 eggs, beaten
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Steps:

Step 1: In a pot, sauté onions, garlic, and ginger until fragrant.

Step 2: Add carrots and celery, and cook for a few minutes until they begin to soften.
Step 3: Pour in chicken broth and bring the mixture to a simmer.

Step 4: Add shredded chicken and season with salt and pepper to taste.
