Egg Malai Kofta

Ingredients:

For Koftas:

  • 4 hard-boiled eggs
  • 1/2 cup paneer (Indian cottage cheese), grated
  • 2 tablespoons besan (gram flour)
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for frying

For Malai Curry:

  • 1 cup onions, finely chopped
  • 1 cup tomatoes, pureed
  • 1/2 cup cashew nuts, soaked and blended to a smooth paste
  • 1/2 cup fresh cream
  • 1/2 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander for garnish

Steps:

For Koftas:

Step 1: Peel the hard-boiled eggs and set aside.
Step 2: In a bowl, combine grated paneer, besan, garam masala, red chili powder, and salt.

Step 3: Divide the paneer mixture into four portions and wrap each boiled egg with the mixture to form koftas.
Step 4: Heat oil in a pan and fry the koftas until golden brown. Set aside.

For Malai Curry:

Step 1: In a separate pan, heat oil and sauté chopped onions until golden brown.
Step 2: Add ginger-garlic paste and cook until the raw smell disappears.

Step 3: Add turmeric powder, coriander powder, cumin powder, and garam masala. Cook for a minute.
Step 4: Pour in the tomato puree and cook until the oil separates.

Step 5: Add cashew nut paste and cook for a few minutes.
Step 6: Stir in fresh cream and salt. Simmer until the curry thickens.

Step 7: Gently place the fried koftas into the curry, allowing them to absorb the flavors.
Step 8: Garnish with fresh coriander and serve the Egg Malai Kofta hot with naan or rice.
