Lemon Chicken Piccata

Ingredients:

  • 4 boneless, skinless chicken breasts, pounded thin
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 1/4 cup fresh parsley, chopped
  • Lemon slices for garnish

Steps:

Step 1: Season the chicken breasts with salt and pepper.
Step 2: Dredge each chicken breast in flour, shaking off excess.

Step 3: In a large skillet, heat olive oil over medium-high heat.
Step 4: Cook the chicken breasts for 3-4 minutes per side or until golden brown and cooked through.

Step 5: Remove chicken from the skillet and set aside.
Step 6: In the same skillet, add chicken broth, lemon juice, and capers. Scrape up any browned bits from the bottom of the pan.

Step 7: Simmer the sauce for 2-3 minutes until it slightly thickens.
Step 8: Return the cooked chicken to the skillet, coating it with the lemon-caper sauce.

Step 9: Stir in chopped parsley and let it cook for an additional minute.
Step 10: Garnish with lemon slices and serve the Lemon Chicken Piccata hot.
