Spicy Chicken Pakoda
Ingredients:
- 1 pound (about 450g) boneless chicken, cut into bite-sized pieces
- 1 cup gram flour (besan)
- 2 tablespoons rice flour
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- Salt to taste
- A pinch of baking soda (optional)
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon chopped mint leaves (optional)
- Water (as needed)
- Oil for deep frying
Instructions:
- In a mixing bowl, combine gram flour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, salt, and baking soda (if using).
- Gradually add water to the dry ingredients, whisking continuously, until you achieve a thick and smooth batter.
- Add the chicken pieces to the batter, ensuring each piece is well-coated. Allow the chicken to marinate for at least 30 minutes.
- Heat oil in a deep fryer or heavy-bottomed pan over medium heat.
- Once the oil is hot, carefully drop the marinated chicken pieces into the oil, a few at a time, to avoid overcrowding.
- Fry the chicken pakoras until they are golden brown and crispy. Ensure the chicken is cooked through by cutting one piece open if needed.
- Remove the chicken pakoras with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
- Garnish with chopped fresh coriander leaves and mint leaves.
- Serve the Spicy Chicken Pakoda hot with your favorite dipping sauce or chutney.
