Spicy Chicken Pakoda

Ingredients:

  • 1 pound (about 450g) boneless chicken, cut into bite-sized pieces
  • 1 cup gram flour (besan)
  • 2 tablespoons rice flour
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • A pinch of baking soda (optional)
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon chopped mint leaves (optional)
  • Water (as needed)
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine gram flour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, salt, and baking soda (if using).
  2. Gradually add water to the dry ingredients, whisking continuously, until you achieve a thick and smooth batter.
  3. Add the chicken pieces to the batter, ensuring each piece is well-coated. Allow the chicken to marinate for at least 30 minutes.
  4. Heat oil in a deep fryer or heavy-bottomed pan over medium heat.
  5. Once the oil is hot, carefully drop the marinated chicken pieces into the oil, a few at a time, to avoid overcrowding.
  6. Fry the chicken pakoras until they are golden brown and crispy. Ensure the chicken is cooked through by cutting one piece open if needed.
  7. Remove the chicken pakoras with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
  8. Garnish with chopped fresh coriander leaves and mint leaves.
  9. Serve the Spicy Chicken Pakoda hot with your favorite dipping sauce or chutney.
