Ingredients:

For the Manicotti:

  • 14 manicotti pasta tubes
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen chopped spinach, thawed and drained
  • 2 large eggs
  • 2 teaspoons dried Italian herbs (oregano, basil, thyme)
  • Salt and black pepper to taste

For the Sauce:

  • 3 cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley for garnish (optional)

Cooking Steps:

For the Manicotti:

Step 1: Preheat your oven to 375°F (190°C). Grease a baking dish.

Step 2: Cook the manicotti pasta according to package instructions. Drain and set aside.

Step 3: In a large bowl, combine ricotta cheese, shredded mozzarella cheese, Parmesan cheese, thawed and drained spinach, eggs, dried Italian herbs, salt, and black pepper. Mix until well combined.

Step 4: Using a piping bag or a spoon, fill each manicotti tube with the ricotta and spinach mixture.

For the Sauce:

Step 5: Spread a thin layer of marinara sauce in the bottom of the prepared baking dish.

Step 6: Arrange the filled manicotti tubes in the dish.

Step 7: Pour the remaining marinara sauce over the top, ensuring the pasta is well-covered.

Step 8: Sprinkle shredded mozzarella cheese over the sauce.

Baking:

Step 9: Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Step 10: Optionally, remove the foil and bake for an additional 5-10 minutes to brown the cheese.

Step 11: Garnish with fresh basil or parsley if desired.

Step 12: Allow the Easy Manicotti to cool for a few minutes before serving.

Step 13: Serve the manicotti on plates, spooning additional marinara sauce over the top if desired.
