Restaurant Style Tandoori Roti & Palak Curry Combo
Ingredients:
For Tandoori Roti:
- 2 cups whole wheat flour
- 1/2 cup yogurt
- 1 tablespoon oil
- 1 teaspoon salt
- Water (as needed)

- 4 cups fresh spinach leaves, washed and chopped
- 1 cup tomatoes, chopped
- 1 cup onions, finely chopped
- 1/2 cup paneer (Indian cottage cheese), cubed

- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 tablespoon ginger-garlic paste
- 1 tablespoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish

Preparation Steps:
For Tandoori Roti:
Step 1: In a large bowl, combine whole wheat flour, yogurt, oil, and salt.
Step 2: Gradually add water and knead to form a soft and smooth dough.
Step 3: Cover the dough and let it rest for 30 minutes.
Step 4: Divide the dough into equal portions and roll them into balls.
Step 5: Roll each ball into a flat, round roti.
Step 6: Cook the rotis on a hot tandoor, griddle, or skillet until they puff up and develop a golden brown color.
Step 7: Optionally, brush with butter or ghee before serving.
For Palak Curry:
Step 1: Blanch the chopped spinach leaves in hot water for 2-3 minutes. Drain and blend into a smooth puree.

Step 4: Add ginger-garlic paste and sauté until the raw smell disappears.
Step 5: Add chopped tomatoes and cook until they become soft.
Step 6: Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Step 7: Add the spinach puree and cook for 5-7 minutes.
Step 8: Add paneer cubes and cook for an additional 3-5 minutes.
Step 9: Stir in heavy cream and cook for another 2-3 minutes.
Step 10: Garnish with fresh coriander leaves before serving.
For Serving:
Step 1: Serve the hot Tandoori Roti with a generous portion of Palak Curry.
