Dhaba Style Dal Fry Tadka

Ingredients:

  • 1 cup yellow lentils (toor dal), washed and soaked
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green chili, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 3 cups water
  • 2 tablespoons ghee or oil

For Tadka (Tempering):

  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 2-3 dried red chilies
  • A pinch of asafoetida (hing)
  • Fresh coriander leaves for garnish

Cooking Steps:

Dal Fry:

Step 1: In a pressure cooker, combine soaked lentils, chopped onions, tomatoes, green chili, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, salt, and water.

Step 2: Cook on medium heat until the lentils are soft and the dal has a creamy consistency.

Tadka (Tempering):

Step 3: In a small pan, heat ghee for the tadka. Add cumin seeds, mustard seeds, dried red chilies, and asafoetida. Allow the seeds to splutter.

Step 4: Pour the tadka over the cooked dal and mix well.

Step 5: Garnish with fresh coriander leaves.
