Bhindi Butter Masala

Ingredients:

  • Bhindi (okra), sliced
  • Tomatoes, pureed
  • Onion, finely chopped
  • Ginger-garlic paste
  • Cashews, soaked and blended
  • Butter
  • Cream
  • Red chili powder
  • Turmeric powder
  • Garam masala
  • Cumin seeds
  • Coriander powder
  • Kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish

Steps:

Step 1: In a pan, heat butter and sauté cumin seeds until they splutter.

Step 2: Add finely chopped onions and cook until golden brown.

Step 3: Stir in ginger-garlic paste and cook until the raw smell disappears.

Step 4: Add tomato puree and cook until the oil separates from the masala.

Step 5: Mix in red chili powder, turmeric powder, coriander powder, and garam masala. Cook for a few minutes.

Step 6: Add blended cashews and continue cooking until the masala thickens.

Step 7: In a separate pan, sauté sliced bhindi until they are tender and slightly crispy.

Step 8: Add the sautéed bhindi to the tomato-cashew masala. Mix well.

Step 9: Pour in cream, add kasuri methi, and adjust salt according to taste. Simmer until the Bhindi Butter Masala reaches the desired consistency.

Step 10: Garnish with fresh coriander leaves and serve this indulgent curry with naan or rice, reveling in the delightful blend of spices and creamy richness.
